Chili is one of my favorite choices when the weather cools because it needs few ingredients and can be used as leftovers in many ways. The side options are endless: cornbread, corn chips, tortilla chips, or rice.

Ingredients

1 – 1.25lb ground turkey or beef

1 green bell pepper, diced

1 small can diced green chilis

2 Tablespoons chili powder

2 teaspoons cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt & Pepper to taste

2 cans petite diced tomatoes (or one 28oz can)

1 can pumpkin puree
-
1 can black beans, drained

1 cup water
Directions

Brown the meat In a greased, large pot on the stove, brown ground meat over medium heat until cooked through.

Add seggies and seasoning Once the meat is cooked, add the bell pepper, green chilis and seasonings.

Mix in wet ingredients When the meat is cooked through and the veggies are tender, add tomatoes, pumpkin puree, and beans to the pot.

Simmer to cook through Cover and simmer on medium-low heat 30-40 minutes, stirring occasionally. If needed, add some of the water to thin the chili out.
