30-Minute Caprese Chicken with Balsamic Glaze

Need a summer dinner that feels fancy but takes under 30 minutes? This Caprese Chicken is it. Juicy chicken breasts topped with fresh tomatoes, mozzarella, and basil, all drizzled with a tangy balsamic glaze. It’s fast, fresh, and tastes like summer on a plate.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 cup fresh mozzarella, sliced or shredded
  • 1–2 tomatoes, sliced
  • Fresh basil leaves
  • Store-bought balsamic glaze (or make your own)

Instructions:

  1. Season chicken with olive oil, salt, pepper, and garlic powder.
  2. Cook in a skillet over medium heat for 5–6 minutes per side, until golden and cooked through.
  3. In the last 2 minutes, top each chicken breast with sliced mozzarella and cover until melted.
  4. Remove from heat. Top with tomato slices and basil. Drizzle with balsamic glaze before serving.

Serving Ideas:
Pair with pasta, quinoa, grilled veggies, or crusty bread. Tastes great warm or cold.
