Easy Sheet Pan BBQ Chicken & Sweet Potatoes (Meal Prep Friendly!)

If you’re looking for a dinner that basically cooks itself, this sheet pan BBQ chicken and sweet potatoes is it. It’s a one-pan wonder that’s hearty, wholesome, and full of smoky-sweet flavor. Bonus: it’s perfect for busy weeknights and makes delicious leftovers for lunch the next day.

Ingredients:

  • 4 boneless, skinless chicken breasts or thighs
  • 2 large sweet potatoes, peeled and cubed
  • 1 red onion, sliced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ cup of your favorite BBQ sauce (plus more for serving)
  • Optional: chopped parsley or green onions for garnish

Instructions:

  1. Preheat oven to 425°F.
  2. Toss sweet potatoes and red onion with olive oil, salt, pepper, and paprika. Spread onto a parchment-lined sheet pan.
  3. Season chicken with salt, pepper, and garlic powder. Nestle onto the sheet pan.
  4. Brush chicken with BBQ sauce.
  5. Bake for 25–30 minutes or until chicken is cooked through and potatoes are tender.
  6. Optionally, broil for 2–3 minutes at the end to caramelize the BBQ sauce.
  7. Garnish and serve.
