Easy Greek Chicken with Homemade Tzatziki

This Greek-inspired chicken is juicy, flavorful, and marinated with pantry staples. Paired with a cool, creamy homemade tzatziki sauce, it’s perfect for meal prep, grain bowls, or quick wraps on the go. Make it once and enjoy it all week long.

Chicken Marinade Ingredients:

  • 1½ lbs chicken breast or thighs
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper

Tzatziki Ingredients:

  • 1 cup plain Greek yogurt
  • ½ cucumber, grated and squeezed dry
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic, finely grated
  • Salt to taste
  • Optional: fresh dill or mint

Instructions:

  1. Combine marinade ingredients and pour over chicken. Marinate at least 30 minutes (or overnight).
  2. Grill or pan-sear chicken until cooked through, about 6–8 minutes per side.
  3. For the tzatziki, mix all ingredients and adjust salt to taste.
  4. Slice chicken and serve with pita, over salad, or in a bowl with rice and veggies.

Meal Prep Tip:
Portion into containers with rice, chopped cucumber, cherry tomatoes, and tzatziki on the side for grab-and-go lunches.
